Lemon Blueberry Muffins
These are so moist & delicious! Light in flavor, perfect for springtime!
1/2 Cup Lemon Olive Oil
1/4 Cup Sicilian Lemon Balsamic
2 Cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sour cream
2/3 cup granulated sugar
1 cup fresh blueberries (raspberry or strawberries would be delicious too)
Mix all ingredients together.
Set oven for 375. Use baking cups for muffins or grease muffin pan. Makes 12 muffins, pour even amount for each muffin. Cook 15-20 minutes. Insert knife at 15 minutes if knife comes out clean muffins are ready, if not, cook additional 3-5 minutes.
